AVOCADO SALAD                  

 

Ingredients:

1 bunch of spinach

1/2 avocado, diced

1/4 red onion chopped

small handful parsley, lightly chopped

1 lemon



Instructions:

Chop spinach into small pieces.

Place into a mixing bowl and mix with the remaining ingredients. Serve in the bowl or on a dinner plate. 

 

Makes 1 serving

ZUCCHINI PASTA
 

Ingredients:

1-2 zucchini or yellow squash

1 cup chopped heirloom tomatoes

1/4 cup chopped parsley



Instructions:

Cut ends off zucchini or squash. Cut in half and put each half in a spiralizer to make noodles and put on a plate.

 

Top with chopped tomatoes and parsley and eat slowly, paying attention to the many flavors of this simple dish. Your taste buds will thank you and so will your digestive system!

 

 

PEACH COBBLER SMOOTHIE

 

 

Ingredients:

1 cup of water
1 cup ice

5-6 peaches

1 ripe banana

1/2 tsp cinnamon



Instructions:

Put all ingredients in a high speed blender and blend until smooth.

FALL GREEN SMOOTHIE

 

When I see apple cider and fresh cranberries in the store, I know it's time to make my favorite smoothie of all! I hope you love it just as much as I do.

 

Ingredients:

2-3 large handfuls kale, Spring mix or other fresh mixed greens

3 cups fresh or frozen fruit blend

2 cups fresh cranberries

2-3 cups fresh apple cider

1 banana

 

Instructions:

Blend everything in a High Speed Blender and enjoy.

STRAWBERRY SMOOTHIE

Ingredients:

3 Mejool Dates, pitted

1 pint fresh strawberries w/ green tops    on

4-5 large leaves fresh kale

2 bananas

 

Instructions:

Blend everything in a High Speed Blender and enjoy. Add ice if you want it cold.
